Licensing and Registration
No mandatory occupational licence for bakers in New Zealand. Food safety certification (NZQA Unit Standard 167 or equivalent) is a practical employment requirement under the Food Act 2014. ServiceIQ administers the NZ Certificate in Baking (Level 3) for bread and pastry production, and the NZ Certificate in Patisserie (Level 4) for specialist pastry work. Overseas qualifications (CAP Boulanger, Certificate III in Baking, City and Guilds, Gesellenbrief) are assessed by employers informally. European trade qualifications are well-regarded by NZ artisan employers. ANZSCO note: bakers working primarily in patisserie may be classified as Pastry Cook (ANZSCO 351312) rather than Baker (351112) – confirm with INZ or an immigration adviser as both codes appear on the Green List.
Immigration Pathways
Accredited Employer Work Visa (AEWV): Primary work visa. Job offer from INZ-accredited employer at or above median wage threshold (NZD $29.66/hr). Some entry-level baker roles may sit close to this threshold; confirm before accepting. Your employer must complete the Job Check process before your visa application can proceed. Visa transferable to other accredited employers after 24 months.
Green List Tier 2: After 24 months as a baker for an accredited employer at the qualifying wage level, apply for NZ residency. Check current conditions at Immigration New Zealand.

Readiness Signals
Strong indicators: trade or culinary qualification in baking or patisserie at Level 3 equivalent or above; 3+ years commercial baking experience; breadth of product range (bread, pastry, cakes, viennoiserie); experience with commercial bakery equipment (deck ovens, rack ovens, spiral mixers, proofers); food safety knowledge including HACCP and allergen management; strong references from well-regarded bakeries or hotels.
